The tables were set up with beautiful linens, elegant plate settings, and lovely centerpieces with flower arrangements of roses and other greenery.

For cocktail hour we served one of our hottest and most requested appetizers. These chicken and mango salsa stuffed phyllo cups are always a big hit!

For dinner, we served a smorgasbord of tasty foods. We started off the buffet with this gorgeous spring salad of fresh greens, cherry tomatoes, cucumbers, carrots, and more.

We also had this great macaroni and cheese bar with all the fixings including diced ham, bacon, chives, and different types of cheeses.

Also on the buffet was a colorful medley of roasted vegetables, a NY strip carving station, and stuffed chicken breasts in a creamy pesto sauce.

Celebrate GRACE Fundraising Dinner

GRACE Christian school recently held their annual Celebrate GRACE fundraising dinner and we were honored to be there. The dinner was to raise funds for the Annual Fund which provides for academic and extra-curricular activities for the students. The tables were beautifully set in bright and vibrant spring colors, white linens, floral arrangements, goodie bags for the guests, and yummy miniature desserts featuring cannoli, lemon squares, and more.

There were so many guests in attendance that we had to set up multiple buffet stations. Here you can see a line of guests enjoying the food and fellowship during the event.

The buffets featured many tasty dishes. We served a creamy penne pasta with mushrooms and red bell peppers, country style green beans with peppers, a beautiful spring salad mix, Italian herb bruschetta chicken, and fresh baked rolls.

Real Raleigh Spring Weddings: The Bradford

Owned and operated by Courtney Hopper and Dana Kadwell, the Bradford is nestled on 12 beautiful acres in the pretty little town of New Hill. The long and dramatic entrance leading to the main house is elegant and looks so pretty centered between all the flowering Bradford pear trees.

The Bradford’s terrace is the perfect outdoor space for a spring wedding reception. Capital Events provided the giant clear tent in case the weather wasn’t cooperating.

Mews Floral Designs also did a fantastic job with these beautiful center pieces.

During cocktail hour, the guests enjoyed many hors d’Oeuvres featuring imported and domestic cheeses, fresh fruits, and an assortment of gourmet crackers. We also served grilled Tuscan, pita, and focaccia breads with hummus, olivada, and tomato basil spreads.

For dinner, everyone was treated to this beautiful spring salad of romaine, fresh strawberries, feta cheese, and candied walnuts finished with our balsamic vinaigrette. Also on the menu was garlic mashed potatoes, a colorful medley of sauteed vegetables, thyme salmon in white wine, and chicken breast stuffed with bacon and Gouda in a pesto cream sauce.

Making Homemade Giblet Gravy for Thanksgiving

Ingredients

The recipe below will roughly make about 3 cups of Thanksgiving giblet gravy.

  • Giblets from a whole turkey or chicken
  • 4 cups cold water
  • 4 tablespoons butter
  • 4 tablespoons all-purpose flour
  • 2 cups pan drippings (use turkey or chicken broth as a substitute)
  • 1/2 cup milk or half-and-half
  • 1/2 teaspoon salt
  • 1/2 teaspoon fresh ground black pepper

Directions

First you should gather all of your ingredients and separate them. Take the liver from the giblets and put in the refrigerator.

Put the other giblet bits into your saucepan. Cover them with the 4 cups of cold water. Bring this to a boil and then reduce to a low simmer for about 1 1/2 to 2 hours. Now add the liver to the saucepan and continue simmering for 30 more minutes.

Using a colander or strainer, drain the giblets and set aside to cool. Keep the liquids to use in the gravy if you need it. Remove the neck meat and chop all the giblets.

Melt the butter in a heavy-bottomed saucepan. Stir in the flour and cook and stir for 3 to 5 minutes or until it starts to turn golden. Now you’ll need 2 cups of either your turkey or roasted chicken drippings, giblet broth, or chicken or turkey stock. Slowly stir this into the roux. Add the milk or half-and-half and continue cooking and stirring until it thickens up.

Taste and season the gravy with salt and freshly ground black pepper. Serve hot!
