Yield: 20 cookies
Prep: 10 minutes | Cook: 8 – 10 minutes

1/2 cup – sifted all-purpose flour
1/2 cup – granulated sugar
1/2 teaspoon – cinnamon
1/4 teaspoon – baking powder
1/2 cup – old-fashioned oats
1/3 cup – unsalted butter, melted
2 tablespoons – heavy cream
2 tablespoons – light corn syrup
1 teaspoon – vanilla extract
2 ounces – dark chocolate, melted
Pinch of salt

First, get your oven preheated to 375 degrees F. Next, grab two baking sheets and either line them with Silpats or parchment paper and then set both of them aside. Now take one of your medium mixing bowls and combine the dry ingredients, including the flour, sugar, cinnamon, baking powder, salt, and oats and set it aside also. Take your mixer’s bowl and combine all of the butter, cream, corn syrup, and vanilla. You should mix with the beater blade until it’s smooth and then slowly add in the dry ingredients. Mix everything until the dry ingredients are fully combined.

Next, take your prepped baking sheets and drop about 3/4 of a teaspoon of cookie dough onto prepared baking sheets about two inches apart. No more than twelve cookies should be placed on each baking sheet as the cookies will spread out in the oven. Bake for 8-10 minutes and remove from the oven and let the cookies cool on the baking sheets for about 2 minutes. Then, carefully transfer cookies to a wire rack and cool completely.
