At Catering by Design, we really enjoy teaching DIY caterers tips and tricks to make your events a smash hit. Today we’re featuring one of our favorite North Carolina catering recipes! Smoked Chicken and Roasted Pepper Dip.
This creamy chicken dip works great for any event and is one of our most sought after menu items! We’re positive your guests will be begging you for the recipe.
For this amazing dish, we modified the recipe to serve 6 guests. Here are the ingredients you’ll need.
First, combine all the ingredients for the marinade. Next, marinate the chicken overnight or at least 4 hours. After the chicken has marinated, rub the red pepper and shallots with olive oil and add a little salt and pepper. Use your smoker or grill to smoke the chicken, peppers and shallots until the chicken has been fully cooked. (Internal temperature should be 165 degrees.)
North Carolina Catering Recipes Tip: Smoking is a great way to prepare any protein. The slow cooking process makes the meat just melt in your mouth.
After the chicken has been completely cooked, you’ll need to shred it. Next, finely chop the shallot and puree the red pepper. Combine these items with the remaining ingredients and mix well. Before you serve, bake the entire dish at 350 degrees until hot and bubbling. Serve with crackers and sliced French bread both toasted and fresh.
