September Recipes and Ideas
We absolutely love this recipe idea, especially if you have your own garden or just love roasted vegetables. This one takes over an hour to cook, so you’ll need to plan ahead or prep the day before. However, this dish is very tasty and nutritious. It’s a great way to keep your kids interested in healthy eating.
Prep Time – 15 Minutes | Cook Time – 1 hr. 20 Minutes | Total Time – 1 hr. 35 Minutes
- 2 – Onions
- 2 – Garlic cloves
- 1 – Medium eggplant
- 1 – Zucchini
- 2 – Green peppers
- 8 – Small tomatoes
- 2 – Sprigs fresh rosemary
- 3 – Sprigs fresh thyme
- Olive oil
- Salt and pepper
- 1 – oven-proof baking dish
The first step is slicing up all of the vegetable. This takes the longest. Next, put all the prepped veggies into your baking dish in layers. Sprinkle salt and pepper over the top and then drizzle olive oil over everything. Give everything a toss to ensure an even coating of oil. Cover loosely with foil and bake for 45 minutes at 350. This will get everything cooked through but not browned. Now remove the foil and bake for another 30 – 45 minutes until golden brown on top. Makes for a great side item for many different proteins, or you can mix it in with pasta.
