If you’re a North Carolina native, or a newcomer looking to soak up some local fun, you probably take part in this annual tradition by visiting your favorite strawberry farm and picking buckets and buckets of these sweet red fruits. This year, why not try a few “out of the box” strawberry recipes that your family will really enjoy. These ideas work great for both spring and summer and you can serve them for breakfast, brunch, or even as an afternoon snack.

Beautiful Strawberry Bruschetta

If you like Bruschetta, then you’ll be sure to love this new take on the classic dish. Use some of your harvest this season to make a wonderful Strawberry Bruschetta. This is great alternative for a spring or summer brunch as it’s made with a mixture of nectarine, grape tomatoes, strawberries, and basil. Slather it all over baguette slices with goat cheese for some extra zing. This yields between 10 to 12 servings, and is quick and easy to make.


1 1/2 cups – fresh strawberries, sliced
1 – diced nectarine
1 cup – grape tomatoes, quartered
3 tablespoons – thinly sliced fresh basil
1 – minced shallot
2 tablespoons – extra virgin olive oil
1 tablespoon – your favorite balsamic vinegar
1 teaspoon – sugar
1 teaspoon – freshly cracked/ground pepper
1/4 teaspoon – salt
1 – 12-oz. French bread baguette
1 – 10.5-oz. goat cheese log, softened


First, you’ll need to preheat your oven to 375°. Next, stir the strawberries, nectarine, grape tomatoes, basil, minced shallot, olive oil, balsamic vinegar, sugar, freshly ground pepper, and salt all together in a medium sized mixing bowl. Prep the baguette by splitting it in half, and then cutting each half crosswise into 4 equal pieces. Take each slice and spread the softened goat cheese on one side and place on a baking sheet.

Bake the baguette slices for 13 to 15 minutes, or until thoroughly heated. Take the slices out of the oven and top with your beautiful Strawberry Bruschetta. Cut the slices into smaller 2-inch pieces and serve.

Chilled Strawberry Soup

This next dish makes for a great first course, or dessert for your next adult dinner party. You are really going to like this refreshing Chilled Strawberry Soup, especially on a warm summer day. This recipe calls for a little Riesling wine, but you can leave it out for a more kid friendly version for family affairs. These directions will yield about 4 cups of soup, double the ingredients to make 8 cups.


3 cups – fresh strawberries, sliced
1 cup – plain Greek yogurt
1/2 cup – your favorite Riesling wine
1/3 cup – sugar


Blend the sliced fresh strawberries, Greek yogurt, Riesling, and sugar in your food processor, or blender, until the mixture is smooth. Make sure you stop the processor periodically to scrape down sides to ensure a good blending. Cover your mixture and chill for 2 hours. Remove from the refrigerator, and garnish with a small drizzle of olive oil, some freshly ground pepper, and more of your thinly sliced, fresh strawberries.
