Great Tasting Holiday Sugar Cookies That Are Gluten Free
Ingredients For the Cookies
- 1 Cup – shortening
- 1 Cup – granulated sugar
- 1 – large egg
- 1 Tbsp – vanilla extract
- 3 Cups – Bob’s Red Mill 1-to-1 gluten free all-purpose flour
- 1 tsp – fine sea salt
Ingredients For the Frosting
- 1/2 Cup – butter
- 1/2 Cup – vegetable shortening
- 3 Cup – powdered sugar
- 1 tsp – vanilla extract
- 2 Tbsp – unsweetened coconut milk
- optional – food coloring
- optional – gluten free sprinkles
Directions For the Cookies
Start by preheating your oven to 350 degrees. Line your baking sheet with parchment or a silicon mat. In a large mixing bowl, cream together your shortening and sugar for 1-2 minutes until light and creamy. Next, mix in the egg and the vanilla extract.
Add your gluten free flour and salt and mix on low speed until completely incorporated. Your cookie dough should now be slightly firm but not stiff or sticky.
Take half of your cookie dough out and place on floured parchment paper. Cover this with plastic wrap and roll it out until it is about a quarter of an inch thick. Use your favorite cookie cutters to make desired shapes. Keep repeating with the remaining cookie dough and scraps.
Move the cookies carefully onto your prepped baking sheet. Bake for 8 to 10 minutes. Let stand for a few minutes and transfer to a wire rack for cooling.
Directions For the Frosting
In a bowl, add the shortening, butter, and powdered sugar. Mix on low speed until well combined. Now mix on medium-high and beat for about 1 minute. Add the vanilla extract and milk and mix for about 1 minute more until the frosting is light and fluffy. If you’re using food coloring, add that last. Frost the cooled cookies and top with your favorite sprinkles.
