Slow-Cooker French Onion Soup

French onion soup is a wintertime classic. We’ve made it easy by find this delicious slow-cooker recipe that uses two different types of onions that get hours worth of caramelizing before the sherry-spiked broth is even added. When finishing up, to add some extra spice, ladle the soup into ovenproof serving bowls and top with the bread. Add cheese and broil until melted.

Makes: 8 servings | Prep Time: 30 minutes | Total Time: 8 1/2 hours

2 tablespoons – butter, cut into 8 pieces
2 tablespoons – extra-virgin olive oil
8 sprigs – fresh thyme
4 cloves – smashed garlic
1 – bay leaf
2 pounds – halved and sliced yellow onions
2 pounds – halved and sliced red onions
1 teaspoon – salt
3/4 teaspoon – ground pepper
4 cups – low-sodium beef broth
1/4 cup – dry sherry

Cheese Toasts:
8 – diagonal slices baguette (1/2-inch-thick), toasted
1 cup – shredded Gruyère or Swiss cheese

We’re going to start with the soup. First off, take the butter and scatter it on the bottom of your slow cooker (6-7 quart). Add the oil, thyme, garlic and bay leaf, then onions last. Sprinkle in the salt and pepper, and then cover for 8 hours on the high setting.

When it’s time to serve, bring your both and sherry to a boil in a sauce pan. Next, remove the thyme and bay leaf from the slow cooker. Now pour your boiling broth into the slow cooker and continue cooking on high, uncovered, for an additional 10 minutes.

During those ten minutes, make your cheese toast. Start by placing a rack in the upper third of your oven and preheating broiler to high. Take your baguette slices and top each one with 2 tablespoons cheese. Place them in the oven and broil until the cheese is melted. This should only take 1 to 2 minutes. Finally, divide the soup into your 8 bowls. Top each with cheese toast.

Garlic-Rosemary Smashed Potatoes

If you love potatoes, then you’ll love this trifecta. It combines the best of baking, mashing, and roasting. Makes a great side item for a juicy steak, chicken breast, or pork tenderloin.

Makes: 4 servings | Prep Time: 15 minutes | Total Time: 40 minutes

1 pound – halved baby potatoes
2 tablespoons – extra-virgin olive oil (divided)
3 – minced cloves garlic
1 teaspoon – chopped fresh rosemary
1/2 teaspoon – salt
1/4 teaspoon – ground pepper

Start by preheating your oven to 425°F. Next, take a large rimmed baking sheet and place it in the oven to preheat as well. Grab a large saucepan and steamer basket and bring about 1 inch of water to a boil. Add the potatoes, cover, and steam for about 12 – 15 minutes, or until tender. While this is working, combine 1 1/2 tablespoons oil, garlic, rosemary, salt and pepper in a small bowl. Now remove the preheated baking sheet and brush it with the remaining 1/2 tablespoon oil.

Next, take your steamed potatoes and place them on the pan with the skin-side up. Smash with the bottom of a jar, or the smooth side of a meat mallet, and drizzle each one with your garlic oil mixture. Roast for about 15 minutes, or until browned on the bottom.
