The last big weekend of the summer is capped off by the Labor Day holiday. It is a popular weekend for backyard cookouts, weekend getaways, and neighborhood pool parties. If you want to celebrate and send off the summer in style, you should plan a Labor Day party for your friends and family.
We’ve put together a few easy tips below that should help you plan the perfect Labor Day party.
Send Your Invites
Since Labor Day is a really busy weekend, people’s plans can fill up fairly quickly with events. Because of all these options, be sure to send out your invites as soon as possible. We suggest using Evites, or create a Facebook event and invite everyone there. Since everyone these days has a Facebook account, you might be able to get all of your RSVPs a lot quicker this way.
Labor Day Party Themes
Labor Day, like July 4th, is all about celebrating our patriotism. Why not have a theme that celebrates all things American? Your theme should be incorporated into your invitations, decor, and outfits.
You do not have to overthink your themes either. A few easy ideas would be a “White Out” theme, to say goodbye to wearing all things white until next spring. Encourage your guests to wear as much white as possible, and all of your decor should be white, or have lots of white accents. You can also have a Red, White, and Blue party and incorporate all the colors of the American flag.
Since everyone considers Labor Day to be the official, “unofficial” last weekend of summer, take this time to enjoy a great backyard cookout. Be sure to plan a menu that almost everyone can eat; for instance, do not serve shellfish or other potential allergens. You can even have a potluck dinner and ask your guests to bring a side, or dessert.
Don’t want to cook this year? Then have one of the best Raleigh catering companies help you out. Catering By Design has affordable menus for any size budget or event. We even have a delivery service for those who don’t need a full catering experience. Contact us for more details.
Here are few great ideas for your menu:
Grilled BBQ Chicken Chicken, Steak, and Vegetable Kabobs Steaks Hamburgers, Cheeseburgers and Hotdogs Coleslaw and Potato Salad Summer Salad with Fresh Greens and Vegetables Mixed Fresh Fruit Homemade Ice Cream
Activities and Entertainment for the Guests
No Labor Day party will be complete without having all the fun games, activities and other entertainment. If you’re celebrating in your backyard, and have the space, then team games are great for older kids and adults. Set up a volleyball net, play birdie, or tag football. You can even have a tug of war between the boys and girls, or adults versus kids. Corn hole and ladder toss are also both fun team games that all ages can enjoy.
If you really want to wow your guests hire a DJ, or local band, to provide some rocking tunes. If you have a fire pit, make sure to have some marshmallows to roast and make s’mores. Kids also love to catch fireflies, so get plenty of jars and containers for some catch and release action.

Summer is finally here! It’s the perfect time of the year for going to the beach, having a pool party, a good ole fashioned backyard barbecue, or just a refreshing beverage on a hot night with all of your friends. Serving up the perfect Mojito will be sure to impress anyone that’s thirsty.
Not sure what a Mojito is? It’s a traditional Cuban cocktail. Mojitos have become pretty trendy here in the U.S. over the past few years. To make an original Mojito, you really only need five simple ingredients. These are white rum, sugar, lime juice, sparkling water, and mint leaves.
Today’s post will teach you how to make one of the best Mojitos that would leave even a native of Cuba impressed with your skills. We’ve geared this recipe up to make 10 servings. After all, it’s never good to drink alone.
This recipe really only takes about 10 minutes to prepare, and is generally ready to serve in 10 minutes.
Ingredients: 100 – fresh mint leaves 5 – limes, cut into 4 wedges 1-1/4 – cups white sugar, or to taste 10 – cups ice cubes 1-3/4 – cups and 2 tablespoons white rum 5 – cups club soda
First, line up your glasses in two rows. Make sure you use somewhat sturdy glasses. Next place 10 mint leaves and 1 lime wedge in each glass. Use something to muddle and crush the mint leaves and lime together. This will release the mint oils and lime juice. Now you’ll need to add 2 more lime wedges and the sugar. Muddle again to release more lime juice.
Don’t strain this mixture, instead fill your glass with ice until it’s almost full. Add the rum, and fill the remainder of the glass with the club soda. Stir everything together and taste. Add more sugar if needed and garnish with a lime wedge.
Raleigh Caterers Pro Tip: Granulated sugar sometimes does not mix well. We suggest making a simple syrup with 1 part sugar 1 part water. Combine, and bring to a boil. To really jazz it up, add 10 or so mint leaves, and half a lime into the pot and let this mixture simmer for about 20 minutes. You now have a fantastic mojito syrup to enjoy instead of using regular sugar. You can even make enough of this to store in your refrigerator ahead of time.
If you really want to get fancy, buy some real sugarcane and slice it up and serve as a garnish. Your guests can use these to muddle their own mint leaves.

We had a full menu for this big event. We started everyone off with a tray of international and domestic Cheeses with gourmet Crackers and a Fresh Fruit Garnish. This was followed by a colorful tray of Fresh Sliced Fruits with lots of pineapple and strawberries that were paired with a summery Yogurt Sauce. Pictured above was a special table featuring different types of Pimento Cheese served over Crostini.
We also stacked the deck with every hors d’oeuvres you could possibly imagine. Our butlers were kept busy serving delicious bites all afternoon.
Featured above are Caprese Skewers with Balsamic Drizzle. These healthy apps are perfect for summer and any event where the guests are up and moving around.
Below you’ll find one of my personal favorites, our famous Phyllo Cup stuffed with Grilled Chicken, Mango and Cilantro. These miniatures pack a lot of flavor in one small bite.
If you need a wonderful option for a summer appetizer, you can never go wrong with Ahi Tuna on a Wonton Chip. This crowd favorite was served with our homemade Wasabi Aioli.
Featured below is another hit for summer, Pesto Shrimp on a Fun and Edible Spoon. Edible spoons are great because they require no cleanup!
These favorites only scratched the surface of what we served to the guests. Not pictured are our Chicken Cornucopia, Steak Fiesta Blossoms, Bacon Wrapped Chicken Bites, and Garlic Cheddar Biscuits with Country Ham with Bistro Sauce.
The buffet started off with a table of Assorted Grilled Pita, Focaccia and Tuscan Breads that was paired with an assortment of Hot Spinach Artichoke, Pimento Cheese with Jalapeno, Pimento Cheese, Hummus and Tomato Basil Spreads. This was followed by another Southern favorite – Fried Green Tomatoes with Pimento Cheese Aioli.
Then, guests enjoyed the two interactive slider stations. Diners were able to make their own Pulled Pork sliders complete with Creamy Cole Slaw, Northern and Southern BBQ Sauces on Miniature Kaiser Rolls. There was also a Mini Fondue Station where guests were able to skewer assorted sausages and dip them in hot melted cheese.
Needless to say, even the Governor and Mayor were impressed!

Drought is taking root all across the world and we need to start doing our part a lot better. As Americans, we waste a lot; sometimes too much! This is especially true when it comes to wasting good food. We take food for granted. For the majority of us, we can just go the local grocery store and get what we want, when we need it. Lots of times we buy things that we never even eat and wind up throwing them away when they spoil. The amount of food that gets tossed out is insane. These wasteful habits are not eco-friendly at all. Plus, with the economy in a constant state of flux, saving money is a good idea for all families and businesses.
Thanks to a recent study by the National Resources Defense Council, about 25% of the food and drinks we buy get thrown away. This means that a family of four will waste about $2,000 worth of food. Even though the average percentage of food spending has dramatically decreased over the past few decades, it still remains the third-largest monthly expense for households.
Below you’ll find some helpful tips that should allow you to cut back on your wasteful food habits!
Have a Food Plan – This might sound confusing but it’s really not. Having a food plan is a great way to keep your family organized, healthy, and happy. A food plan will also allow for you to use less food than you need too. Your food plan should be a combo of your meals that you want to cook during the week, as well as your grocery list. This might not sound like a fun task, and sometimes it isn’t. If you take some time over the weekend to get your planning and shopping completed, you’ll free up a lot of extra time during the week.
Getting it all done at once will save you several trips to the grocery store and back. That’s a lot of time and gas money saved right off the bat. Get yourself a few good recipe books, a monthly planner (or smartphone app), and start planning away. As you’re writing out your weekly meal plans, start taking inventory of what you have already that needs to be eaten first, and then make your grocery list.
Stick to Your Grocery List – Going to the grocery store, especially when hungry, can lead to overspending on food that we do not really need, or even actually want in some cases. This is one of the biggest reasons why making a food plan and grocery list is important. When you go grocery shopping, make a commitment to not stray from your grocery list. Stick to it and forgo the random impulse buys. Also, buying in bulk is not always the best route. This can lead to buying too many of the same item which can lead to spoilage and food rot. Be aware of your spending habits and if you only need 2 potatoes, forget buying the large discounted bag.
The Right Food Storage – We waste a lot of food due to poor organization and storage practices. Failing to put meat in the freezer is also key to premature food loss. Please take the time to get your pantry well organized. This will always help you when making your grocery list so that you don’t buy duplicate items. Be wary of where you place certain food items in the fridge. For instance, do not keep eggs and milk in the door section because when you open the door these items lose the most temperature control.
Environmentally Focused Raleigh Caterers | Catering By Design
When we waste food, we waste more than money. We waste the resources, such as water, that it takes to actually grow the food, we waste people’s time and energy getting it to the local stores for us to buy, and we waste a valuable resource that some people in the world fight for every day. We hope this post will help you change the way you feel about throwing out food the next time you clean out your fridge.

The North Carolina Foundation for Public School Children held its Third Annual Champions for Children Gala recently on April 23, 2015. The special event was held at the luxurious Grand Marquise Ballroom in Garner, North Carolina and the fun festivities began with a silent auction at 5:30 p.m followed by dinner which was served at 6:30 p.m.
The 2015 Champions for Children Honorees:

The Dale (Earnhardt) Jr. Foundation
The Honorable Howard E. Manning, Jr.
Senator Dan Blue
Rev. Dr. Nancy Petty
Senator Martin Nesbitt, Posthumously
Catering By Design had the honor of serving dinner for this wonderful fundraiser for the second year in a row. We wanted to share a few of our favorite images from the event in this post, but if you want to see the entire gallery, you’ll have to visit us on Pinterest.
Before the silent auction started, the elegantly decorated tables were pre-set with salads, water and tea, and desserts. The springtime salad was made of beautiful Baby Greens with Dried Cranberries, Mandarin Oranges and Feta Cheese finished off in a crisp Citrus Vinaigrette Dressing.
For the side dishes, guests enjoyed making their way down two separate buffet lines that featured Penne Pasta with Roasted Red Peppers, Portobello Mushrooms and Basil Cream Sauce, and Garlic Mashed Potatoes (which are not pictured).
A magnificent Sauteed Vegetable Medley of broccoli, zucchini, squash, carrots, and red peppers was a hit with the health conscious guests.
Next we have our champion of the buffet, the Stuffed Chicken Breast of Spinach, Sundried Tomatoes and Vermont White Cheddar, Topped with a Parmesan Cream sauce. This dish is simply amazing to eat.
Anchoring both dinner buffets were two beefy carving stations. Chef James served up Rosemary Roasted Roast Beef with Balsamic Onion Marmalade, Whole Grain Mustard Sauce, and Horseradish Cream on the side. Guests were able to use the fresh baked Rolls with Butter to make miniature sliders.
The attendees of the fundraiser also got to enjoy Mousse Layered Chocolate Cake along with Cheesecake with Strawberry Drizzle for dessert.

We hope you enjoy these tips and as always, if you need the very best in Raleigh caterers please give us a call, or just check out our menus first and call us later.
Mother’s Day Invitations
If you’re going to plan on having a party for your mother then be sure to invite all of the close relatives and all of her friends. Make sure to include all of the proper details such as date, times, locations, and any other special instructions such as if you want them to bring a dessert, or potluck side. Send your invitations out at least two weeks ahead of time to give everyone invited time to reply and make their plans.
Mother’s Day Decorations
Your mom will really appreciate it if you make sure the decorations for her party are tasteful and represent her. Get a lot of her favorite flowers for centerpieces and put up some of your favorite family photos on a memory board for everyone to see. Maybe even have a guest book for your friends and family to leave sweet messages to your mom. No Mother’s Day party is complete without a banner, so stop by your local print shop, or even Walmart and get a banner that reads “We Love You Mom”, or “Happy Mothers Day”. Wedding Day Photography Tips
One of the first things that you need to do is make a list of some of the must-have poses for your wedding. Things like pictures with you and your family, you and your bridesmaids, you and your maid of honor will be a good place to start, but take it step further and really think about your venue. Maybe there is a winding staircase that you wanted to take advantage of, or maybe the property features an old barn by the pond, both of these ideas would be a good backdrop for a few photos.
Pinterest is a great place to look for inspiration as well. Just login to your account and search for your wedding venue. You’ll probably find a lot of creative options that you had never thought of. You might even find a few that you’ll want to scratch from your list. Just don’t go overboard with it because too much Pinterest can actually add to the stress that you’re already under by making you want to add too much with too little time.
You should also make a few trips out to your venue during the timeframe of your ceremony, when it’s available of course, and take note of the lighting and how/where the sun shines on the places that you want to be photographed. Make sure to scout out the inside and outside of the grounds. You can also ask the venue staff for suggestions. They should be experts at helping you pick the best places to be photographed while on their property.
Also, make sure you have a sit down meeting with your photographer and create a timeline for all of your photos that will be in concert with the other time elements of your wedding. You are really going to want everything to flow smoothly and this meeting will give you an opportunity to make sure your photographer is on the same page with the other vendors, like the caterer.
Overall, have trust in your wedding photographer. If they are a hired professional then this is their craft … this is what they do. You should be willing to give them some creative power of their own. This way they will be sure to capture the quality images that you’ll love for a lifetime. If you have done your research then you shouldn’t have anything to really worry about as long as you communicate your needs.

Ingredients: Soda Bread: 1/2 stick – unsalted butter 2 cups – all purpose flour 1 1/2 cups – whole wheat flour 1/2 cup – oats 1 tablespoon – packed brown sugar 2 teaspoons – baking powder 1 teaspoon – baking soda 1 teaspoon – salt 1 3/4 cups – buttermilk 1/2 cup – dried currants 1 – egg white, beaten Honey- Butter: 1/2 cup – unsalted butter, softened 1 tablespoon – honey 2 shakes – ground cinnamon
Directions: First, preheat your oven to 375°F. Now, in a small saucepan melt the butter over medium heat for 3 – 4 minutes, or until the butter is a golden brown color. You’ll need to keep a close eye, and stir it often to avoid burning it. Once melted, remove the pan from the heat and set it aside to cool. Now take your large bowl and whisk together the flours, oats, brown sugar, baking powder, baking soda and salt. Now stir in the browned butter and the buttermilk and mix together until everything in the bowl is moistened.
On a well-floured surface, turn the dough out and sprinkle the currants on top. You’ll need to knead the currants gently into the dough until everything comes together. This will take about 7 turns. Now you should divide the dough in half, and shape each half into balls. Take each dough ball and lightly flatten it into a 6-inch round. Place each of the rounds on an ungreased baking sheet and space them 5 inches apart. Now take your knife and cut a ½ inch deep “X” across the top of each dough round and brush them with your egg wash.
Bake for about 40 to 45 minutes, or until they turn a deep golden brown color. Use your knife to test the center, if the knife comes out clean then cool the breads on a rack for at least 10 minutes. Serve the bread warm or at room temperature.
Now, to make the honey butter all you need to do is just mix the softened butter with honey and cinnamon in a small bowl until everything is blended together. Serve with the bread.

A lot of brides dream of having a wonderful summer wedding in June or July. After all, it seems that the summer and fall months are the most popular ones to get married in. Why not do something different and have your wedding on one of the biggest nights of the year – New Year’s Eve? Just stop and think about it for a second … you could be tying the knot on the last night of the year where popping champagne bottles at midnight and glamorous decor just may be the perfect backdrop for saying your “I Do’s”.
Because New Year’s Eve is not a traditional date to have a wedding, some vendors might be offering off-season discounts. You’ll have to plan early though, because on the other hand some venues and vendors will be charging extra for the holidays. Other vendors, such as limo services, are another great example of something you’ll really have to plan ahead and shop around for. Just think about how many different groups of people will be trying to use a limo service for their New Year’s Eve holiday celebration. You’ll also need to think about hotel stays for your out of town guests. This could also be challenging on New Year’s Eve, depending on your location.
News Year’s Eve gives you great opportunities to really have a grand wedding. If you really want to set your wedding apart from all the others, here is your chance. Start off by having an all inclusive NYE party-like reception for your wedding. Make sure your theme is something black tie, elegant, or Gatsby inspired. You can even choose to have a masquerade ball. Use plenty of metallic colors. Gold and silver with black accents are perfect. Go wild with it and you can even incorporate this into your bridesmaid’s dresses. Drop confetti and balloons during the champagne toast at midnight or go outside for sparklers and fireworks. We guarantee that no one will ever forget your anniversary date.
A great idea for a New Year’s Eve wedding is to have everything at a destination hotel. This way you will not even have to worry about your friends and family drinking and driving if alcohol will be served at the reception.

Continuing with the best 2014 wedding trends, we’re going to talk about the best foods for breakfast catering in Raleigh for morning weddings. A morning wedding can be your unsung hero this season because they can be more affordable than afternoon and evening events. To help you plan your morning wedding, we’ve gathered some ideas that will make sure the food is perfect for all your guests.
Before we dive right into the food trends, let’s talk about timing. If you’re having a morning wedding, your guests are going to be eating fairly early. Try to serve breakfast between 9 -10:30AM and brunch typically takes place between 11AM – 2PM. Just remember that some guests’ stomachs might not be ready to handle heavy food, so make sure to have some light, fruity starters served with juice or coffee before moving on to the heavier courses.
Drink Time! One of the reasons a morning wedding can be cost effective is mainly because of the choice of beverages. We suggest starting guests off with a tricked out coffee and tea bar for both hot and iced drinks; hot chocolate, juice or fruit smoothies are great for the kids. Don’t forget the lemonade. If you’re serving morning-time cocktails, then consider bloody marys, mimosas or bellinis.
For the food, decide if your having a formal, sit-down wedding or buffet style meal. We feel a brunch buffet works best for morning weddings allowing guests to mingle while they fix their plates. Also, instead of a traditional buffet try to incorporate as many interactive food stations as possible. These are really trendy and keep the food lines moving. Some ideas for your brunch buffet and food stations could be a gourmet crepe, french toast or omelet station, biscuit or waffle bar, and mini quiche, mini breakfast soufflés or miniature eggs benedict. Instead of having traditional muffins and croissants, how about serving orange-scented scones and banana walnut bread? And don’t forget your vegetarian friends. Make sure to have a few different healthy options besides just a fruit salad.
Finally, if you are unsure of serving a traditional wedding cake at a morning wedding, then a great alternative is a gourmet waffle tower.
