The University’s College of Sciences recently held an appreciation dinner at the amazing Hunt Library to honor the donors and gift givers that help deserving students reach their potential. These donors adopt a student and help them throughout their career at NCSU as long as they continue to meet qualifying metrics – a great opportunity for certain students. This event also allows these students to finally get a chance to meet their sponsors and thank them for their charity and generosity.

As the guests made their way into the banquet hall, they were greeted with a beautiful presentation of bright colors, flowers, and gorgeous table settings. Each table was pre-set with an assortment of freshly baked rolls, butter, and beverages. As the guests were seated, they were served a salad of Baby Greens with Fresh Strawberries, Feta Cheese and Candied Walnuts that was finished off with a Basil Vinaigrette Dressing.
For the main course, the guests enjoyed a plated combo meal of Sliced Beef Medallions topped with a Chianti Mushroom Sauce and served with Red Skin Mashed Potatoes or Salmon topped with a Dill Cream Sauce and served with Fresh Green Beans with Garlic and Lemon Zest. Not pictured was a vegetarian option that consisted of a hearty Tomato, Basil and Gouda Stuffed Portobello Steak that was also served with Red Skin Mashed Potatoes and Fresh Green Beans with Garlic and Lemon Zest.
The Dessert Trio Flight won everyone over! This lovely arrangement consisted of Pumpkin Cranberry Cake With Pumpkin Cheesecake and Tart Cranberries, Chocolate Cake with Peppermint Mousse Topped with White Chocolate Ganache, and a Lemon Shortcake with Tangy Lemon Preserve Topped with Whipped Cream. Outstanding!

The Hearing Loss Association of America, or the HLAA, started the Walk4Hearing event way back in 2006 with just 6 walks. This year, the Walk4Hearing event is celebrating almost 10 years of walking for hearing loss. 21 walks will be scheduled throughout the entire United States to raise awareness. During this past decade, this HLAA event has brought more than 58,000 people together for a day of fun and a chance to share stories as well as to make hearing loss an urgent public health issue.
This year, the 10th annual North Carolina Walk4Hearing was held on Sunday, October 18th at the WakeMED Soccer Park in Cary, NC. This fun, family event was to benefit the HLAA, and local cochlear implant company MED-EL was the presenting sponsor!
MED-EL’s founders actually developed one of the world’s first cochlear implants in 1975. Since then, they’ve been a world leader in setting new standards in hearing implant technologies. MED-EL has led the way developing and manufacturing technologically advanced hearing solutions for people who suffer from many kinds of hearing loss.

We had over 400 hungry guests at the event so we set up multiple buffets so everyone could get their plates in a timely manner. If you’re curious, this is how we would set up a large corporate catering event.
For the sides, we offered our delicious Mac and Cheese, creamy Cole Slaw, and a huge bounty of classic Baked Beans along with fresh baked Rolls and Butter.
The main star of the day’s big meal was our famous Carolina Pulled Pork. This was served with Eastern and Western style sauces.
For the other big dish, guests devoured the Bone-In BBQ Chicken; another North Carolina favorite!

The Helping Horse therapeutic riding program was founded in 1989 to serve physically, mentally, and emotionally disabled youth throughout Wake County. Their focus is to provide a therapeutic experience for individual riders by combining riding skills with games and activities to enhance their strength and balance, all while having lots of fun!
Most of what they offer happens to be on horseback. This makes for an exciting experience interacting with large and loving animals. Helping Horse also offers ground lessons, like grooming and tacking, so that the riders get a chance to understand what it takes to care for the horses.
The Helping Horse Therapeutic Riding Program also has an ultimate goal. They strive to make sure that each program improves the rider’s quality of life. They aim to help people become more independent and productive so they too can be active members of the community.
Helping Horse recently hosted a fundraising gala event that was held at The Oaks at Salem. We started guests out with a beautiful table of hors d’oeuvres set up on an old and rustic wagon. Guests enjoyed Grilled Pita, Tuscan and Focaccia Breads served with Red Pepper Hummus, Tomato Basil and a Hot Spinach Artichoke Dip.
Imported and Domestic Cheeses were also available and paired with an assortment of Gourmet Crackers and Seasonal Fruit.
For dinner, we provided a grand buffet featuring some of our favorite menu items. A beautiful Baby Green Salad with Tomatoes, Cucumbers, and Carrots led the way, finished with our homemade Balsamic Basil dressing on the side.
The sides consisted of a savory Saute Vegetable Medley along with a creamy Penne Pasta with Portobello, and Roasted Peppers in a Basil Cream Sauce, and fresh baked Dinner Rolls. The main dish was a heavenly Chicken Breast stuffed with Spinach, Sun-Dried Tomatoes and White Cheddar in a heavy cream sauce.
For dessert, we served homemade Miniature Eclairs and Gluten Free Chocolate Cake that was paired with a Raspberry Sauce on the side.

The Park Scholarship award, at North Carolina State University, is a four-year scholarship program given to certain students that is based on outstanding accomplishments, as well as, potential in scholarship, leadership, service and character.

We started everyone off with a Summery Salad with Fresh Greens, Carrots, Cucumbers and Tomatoes House Vinaigrette and our Homemade Ranch Dressing.
Since North Carolina State is located in the heart of Raleigh, what better way to kick off another fall semester than having a Southern Feast at one of the oldest pubic parks in the U.S? Guests, both old and young, enjoyed the Pullen Park Pulled Pork that was served with Hot Sauce, as well as Eastern Carolina BBQ Sauce & Western Carolina Tangy Tomato BBQ Sauce, along with BBQ and Fried Chicken with Homemade Macaroni-and-Cheese, and fresh Rolls with Butter.
For dessert, the guests enjoyed two summer favorites – Oreo Chocolate Mousse and below you’ll see our famous Homemade Banana Pudding!

Planning an event takes a lot of work, organization, and resources. If you are not careful, you’ll have budget overruns, bad scheduling, and missed deliveries. There are ways that you can bypass a huge disaster by avoiding a few common mistakes. Take a look at the list we put together and be sure to not do these things.
Setup Time – One big mistake that lots of event planners make is not allowing enough time to set everything up. If there is always a rush to get all the details taken care of before the event starts then you need to do a better job estimating the time it takes to complete these tasks. Be sure to plan ahead for delays and get everyone working there early. You do not want to have a room full of workers trying to finish up while the guests are arriving. You should strive to have all the tasks completed at least 15 minutes before the event is timed to start.
Not Enough Help – We know that labor costs can be high, and that you’re probably trying to save budget money as well. However, do not cut yourself short by not having enough help to get all the tasks completed on event day. Just like not having enough time, not having enough help is just as bad, if not worse. Not having enough help is actually considered to be worse than running over your budget, as short help can ruin your event. Don’t be scared to spend a few extra hundred dollars on additional help to ensure your event runs smoothly. You can always send home any hourly help early if they’re not needed.
No Plan-B – Do not ignore Murphy’s Law. You know the one that says that anything that can wrong, will go wrong? Take that approach and do not get caught without having a backup plan in place. Do everything from planning for bad weather, to having to move your venue all together. Try to have a contingency for every step of the way.
Confirm Your Vendors – Finally do not forget to confirm with all of your vendors. Most vendors have multiple events each day, so be sure they remember yours. You should always strive to get either verbal, or email confirmation from all of your vendors 48 – 72 hours in advance. This will save you a ton of headaches.
