Hearty Second Layer – The second layer should be hearty enough to act as a dressing barrier to the rest of the layers. It should also be a vegetable that would taste good marinated or pickled. Start with halved grape tomatoes, bell peppers, onions, carrots, and cucumbers.
Order By Weight – From here you’ll want to layer the rest of the salad by weight with the greens and lighter elements, like croutons, on top.
Packing Proteins and Fruit – If you’re making these salads for a gathering or event, be careful about prematurely packing meats, cheeses, nuts, and fruit. If I’m making these for my dinner guests, then I’ll just pack the jars before everyone arrives. If I’m prepacking the salads for future lunches, dinners, or catering events, I’ll add these elements the day of.
The Right Tightness – If you’re going to be eating the salad directly from the mason jars then be sure to leave some shaking and mixing room. You want all the ingredients to somewhat mix together. If you’re going to be dumping the jars into bowls, then you can pack the jars tighter.
Expiration Times – Mason jars are air tight so the salads should keep for about a week, and sometimes longer if sealed correctly. This also depends on how tightly the jars are packed too. The more air that gets trapped inside, the quicker the salad will spoil.

Slow-Cooker French Onion Soup
French onion soup is a wintertime classic. We’ve made it easy by find this delicious slow-cooker recipe that uses two different types of onions that get hours worth of caramelizing before the sherry-spiked broth is even added. When finishing up, to add some extra spice, ladle the soup into ovenproof serving bowls and top with the bread. Add cheese and broil until melted.
2 tablespoons – butter, cut into 8 pieces
2 tablespoons – extra-virgin olive oil
8 sprigs – fresh thyme
4 cloves – smashed garlic
1 – bay leaf
2 pounds – halved and sliced yellow onions
2 pounds – halved and sliced red onions
1 teaspoon – salt
3/4 teaspoon – ground pepper
4 cups – low-sodium beef broth
1/4 cup – dry sherry
8 – diagonal slices baguette (1/2-inch-thick), toasted
1 cup – shredded Gruyère or Swiss cheese
We’re going to start with the soup. First off, take the butter and scatter it on the bottom of your slow cooker (6-7 quart). Add the oil, thyme, garlic and bay leaf, then onions last. Sprinkle in the salt and pepper, and then cover for 8 hours on the high setting.
When it’s time to serve, bring your both and sherry to a boil in a sauce pan. Next, remove the thyme and bay leaf from the slow cooker. Now pour your boiling broth into the slow cooker and continue cooking on high, uncovered, for an additional 10 minutes.
During those ten minutes, make your cheese toast. Start by placing a rack in the upper third of your oven and preheating broiler to high. Take your baguette slices and top each one with 2 tablespoons cheese. Place them in the oven and broil until the cheese is melted. This should only take 1 to 2 minutes. Finally, divide the soup into your 8 bowls. Top each with cheese toast.
Start by preheating your oven to 425°F. Next, take a large rimmed baking sheet and place it in the oven to preheat as well. Grab a large saucepan and steamer basket and bring about 1 inch of water to a boil. Add the potatoes, cover, and steam for about 12 – 15 minutes, or until tender. While this is working, combine 1 1/2 tablespoons oil, garlic, rosemary, salt and pepper in a small bowl. Now remove the preheated baking sheet and brush it with the remaining 1/2 tablespoon oil.
Next, take your steamed potatoes and place them on the pan with the skin-side up. Smash with the bottom of a jar, or the smooth side of a meat mallet, and drizzle each one with your garlic oil mixture. Roast for about 15 minutes, or until browned on the bottom.

Thanksgiving is only a few weeks away and if you have not thought about buying your bird for the big day then you should probably get going. If this is the first Thanksgiving that you’re cooking dinner, you might be a little confused by all of the options out there.

Turkey Buying Tips!
When it comes to buying a turkey, there are going to be several options you will find during your search. Here is a basic breakdown of each turkey type.
Natural – Natural turkeys have been processed, but minimally. However, they do not contain artificial flavors, ingredients, coloring or preservatives. This year natural turkeys are selling for between $1.30 – $2.50 per pound. You can typically find them at most supermarkets.
Organic – Organic turkeys can be considered free-range also. Organic means that they have been fed grains that are pesticide and chemical free. Organic turkeys are also not given antibiotics, steroids or other hormones. This type of turkey will typically have a stronger turkey flavor than natural birds. These usually cost more and can sell for around $4 – $5 per pound. You’ll find them at high-end grocers as well as local farms, depending on where you live.
Kosher – Kosher turkeys are birds that have been processed according to Jewish dietary laws. These turkeys have been salted inside and out, and are left to drain before soaking and washing. The salting pulls out the moisture, which makes the meat more dense. Kosher birds also have a fuller taste, and are more expensive than natural turkeys. Kosher birds cost between $3 – $6 per pound.
Free-Range – Free-Range birds are raised outdoors on a farm where they can roam around as they like. They also eat natural food, like bugs and grubs. This type also has a robust flavor and texture compared to natural turkeys. These cost around $4 – $6 per pound and you can even find them at some supermarkets, natural food stores or turkey farms.
Buying Fresh or Frozen?
This might be a hard question as well so we will break it down. If it were me, I would buy a fresh turkey. They just taste better, are more tender, and typically are also juicier. However, the drawback is you cannot buy one too far in advance or it will go bad. This can leave you without a bird if you are not prepared. If you want a fresh turkey you should pre-order one and have it on hold for Thanksgiving.
Frozen turkeys can be purchased at much lower costs, and several weeks ahead of time. However, frozen turkeys can dry out quickly if not prepared correctly. Also, you have to make to time to defrost your bird. It can take a whole day per each 5 lbs of turkey. So if you have a 20 lb turkey, you’ll need a good 4 days for it to thaw out.

Do you need a few scary good recipes that will help you celebrate Halloween in a fun and easy way? We’ve got just what you’re looking for. These two dishes are great for a snack, or make for the perfect appetizers for your Halloween party! Today we have stuffed peppers that are wrapped in cheese to look like mummies, and a great dessert or snack recipe that will transform an ordinary pear into a spooky ghost. Needless to say your kids will love these.
16 – ripe olive slices
4 – medium poblano peppers, cut in half lengthwise, seeded
8 – slices mozzarella cheese, divided
1 pound – mild country sausage
1 can – no-stick cooking spray
1 can – 8 oz Hunt’s Tomato Sauce with Basil, Garlic and Oregano
1 can – 10 oz diced tomatoes & green chilies, drained
1/2 teaspoon – garlic powder
1/2 cup – chopped yellow onion
1 cup – cooked long-grain white rice
1/4 cup – water
First, preheat your oven to 375°F. Next, get your 13 x 9 baking dish and spray it with cooking spray. Now place each pepper in the dish with the cut-side down and add 1/4 cup of water. Cover and bake for 20 minutes, or until the peppers are almost tender. While the peppers are baking, take 4 of your cheese slices and cut these in half, cut the other 4 slices into thin pieces; set them aside for later.
Next grab your large skillet and heat it up over medium heat. Add the sausage, onion and garlic powder, and cook for 5 minutes or until the sausage is no longer pink. Drain the sausage and add the diced tomatoes, tomato sauce and rice to the skillet. Mix everything up to combine all of the flavors.
Now place this mixture in each pepper and top each piece with a half slice of cheese. Cover the dish again and bake for about 10 minutes, or until everything is nice and hot. When ready, remove from the oven and let it slightly cool. Now place the thin cheese strips over each pepper in a crisscrossing pattern to resemble a mummy. Use the olives to make the eyes. Enjoy!
1 – cinnamon stick
1 – pinch dried cinnamon
1 – small bag of sunflower seeds
1 – small bag of dried blueberries or currants
4 – ripe pears, peeled (leave stalk intact if possible!)
7 oz – pomegranate juice
10 oz – apple juice
First, take your peeled pears, apple juice and cinnamon stick and place them in a large enough sauce pan. Cover the mixture and simmer gently for about 20 minutes. When the pears are slightly soft, remove from the saucepan and place on a plate. Next remove the cinnamon stick and continue to gently simmer the remaining apple juice for another 5-10 minutes. You want to reduce the apple juice to a slightly thickened syrup, then remove.
Now grab another small sauce pan and gently simmer the pomegranate juice for about 10 minutes until it also becomes a slightly thickened syrup, then remove.
Take each pear and cut a small slice off the bottom to form a base; they should be able to stand on their own. Give each pear a “pair of eyes” by using a skewer to make two holes and pushing a blueberry or currant in each spot firmly. Press the sunflower seeds in underneath, in a circle, to give the shape of a mouth. Now drizzle the pomegranate syrup over the pear to simulate the “blood” and use your apple juice syrup to make a small puddle around each ghostly pear. Serve them as a treat, snack, or appetizer.
