Catering by Design is one of the best Raleigh wedding caterers for saving time and money for your wedding reception. Wedding Gifts to Avoid Registering for!

Home Decor – Registering for wedding gifts takes some time and planning. You’re going to need things to fill your new house, however, try to stay away from listing lots of home decor items. Your tastes are going to change over time and so will your decor. Save the space on your gift registry for things you’re going to need and use.

A Wine Decanter – Having a nice wine decanter sounds like a good idea, especially if you really like to drink wine. Even the most sophisticated wine connoisseur will tell you that wine must decant if you want to get the best flavor. However, this takes time and patience. If you’re like me then you want to open a bottle and have a glass, not wait 2 – 3 hours.

Panini or Sandwich Press – Panini and sandwich pressers were big a few decades ago. Some people still occasionally buy them even today. Before you put this on your registry, think about the counter or cabinet space it takes to store one. Also consider how often you’re really going use this kitchen device. A sandwich press really isn’t that practical to have in the kitchen.

Ready for more bad gifts to register for? Head on over to our next post for more items to leave off your wedding gift registry by clicking here. If you need the best food and flavors for your upcoming wedding reception, please keep reading to see how Catering by Design can help you save time and money.

It’s Back-to-School Time! Check Out These Lunch Tips

Posted in: Catering in Raleigh NC

Summer is over and now it is time to go back to school. If your child is a picky eater then, as a parent, I know you are dreading packing their daily lunches. I know how frustrating it can be to see that only some of the food has been eaten after you spent a lot of time getting everything ready the night before or the morning of school. Furthermore, it’s also stressful trying to pack healthy food options. Hopefully these tips below will help you. If you’re searching for affordable Raleigh catering for an upcoming event, call Catering by Design. You’ll love our food, service, and great prices.

School Lunch and Picky Eaters – How to Make It Work

Make Lunchtime a Team Effort

Getting your picky child to eat lunch starts with a team effort. This means that you have to get your child involved in the planning, shopping, and packing of their own lunch. Let them help you make a grocery list of all the things they want packed in their lunch. Then you’ll want them to tag along with you to the grocery store to purchase those items and to double check that’s what they want to eat. Finally, have your child help you pack their lunch for the next day.

Make Lunchtime Fun

Making lunchtime fun all starts with getting your child involved. Start by taking them shopping for a new lunchbox. A new lunchbox will get them excited about showing all their friends at school. Also, like we mentioned above, let them help you pick out certain foods at the grocery store that they want to eat. When packing their lunch, leave a cute note for them to read that they’ll find when they open their lunchbox. Check out this link for a few ideas.

Don’t Focus on the Negative Things

Finally, make it a point to only focus on the positives and not the negatives of lunch. There’s no reason to get frustrated with your child for being a picky eater. Honestly, most kids are. Save yourself time, money, and headaches by comprising and packing only the foods you’ll know they’ll eat.

Keep Fruits and Veggies Fresh for Longer Periods of Time

Fruits

Tomatoes going bad? Slice or chunk them into pieces and roast them for a couple of minutes. Store them in the fridge in some olive oil to extend their life for about a week.

Keep your apples away from other fruits and vegetables because they give off ethylene gas which makes other foods spoil prematurely.

Do not store your avocados in a bag. This will cause them to rapidly ripen.

Wash berries in water with a splash of vinegar before storing to kill bacteria and other spores. Store them in their plastic container or use a resealable plastic bag in the back area of the refrigerator.

Bananas spoil slower when they’re in a bunch, so avoid separating them. Keep them at room temperature and not in the fridge. When bananas get too ripe, freeze them for later to make banana bread or muffins.

Vegetables

Excess moisture makes vegetables rot quicker so line your crisper drawer with paper towels to absorb it.

Wrap fresh mushrooms in paper towels to prevent them from getting slimy.

Store fresh garlic in a bag or basket unsealed to avoid excessive moisture buildup.

Rub summer and winter squash with vegetable oil and store them in the pantry to preserve them for several months.

Lettuce needs some extra moisture to keep it from dehydrating. Wrap the head in damp paper towels and store in a plastic bag.

Celery, carrots, and radishes should be chopped and stored in a little bit of water in the fridge to extend their freshness and crispness.

Kale, collards, Swiss chard, and other leafy greens should be stored in a glass of water with their ends trimmed. Place a loose bag over the top.

Saving Money When Grocery Shopping

Stop Shopping While Hungry

Never go to the grocery store when you’re hungry. Instead, try to only shop when you have a full belly. This is another trick that will help you avoid the dreaded impulse buy, something we talked about in our last post. Scheduling your grocery shopping on Saturday and Sunday will also help.

Skip the Toiletries

Did you know that buying toiletries from the grocery store is costing you more money? It is! You can buy these items at cheaper prices at other stores, like a pharmacy, Walmart, etc.

Try Leaving Your Kids at Home

This one is a long shot, we know from experience, but try to leave your kids at home when going out grocery shopping. This is really unavoidable at times. However, you’ll save time and money if you can. You’ll be able to focus on your list and your children will not be there begging you to buy them things you know they won’t really like.

We hope the tips in our last two posts help you save on your grocery bills. Make sure to come back next month for the final post in this series. We’ll finish up with even more awesome grocery shopping tips that will help you save money. Shrimp Piccata with Zucchini Noodles

This new twist on Shrimp Piccata tastes great. A tangy lemon-caper sauce and zucchini noodles gives this healthy Italian recipe a makeover. This recipe makes about 4 servings and takes about 35 minutes to prepare.

Ingredients
5-6 medium zucchini (2 1/4-2 1/2 pounds), trimmed
1/2 teaspoon salt
2 tablespoons butter
2 tablespoons extra-virgin olive oil, divided
2 cloves garlic, minced
1 pound raw shrimp (21-25 count), peeled and veins removed, tails left on if desired
1 cup low-sodium chicken broth
1 tablespoon cornstarch
1/3 cup white wine
1/4 cup lemon juice
3 tablespoons capers, rinsed
2 tablespoons chopped fresh parsley

Directions
First, make your zucchini noodles using a spiral vegetable slicer, or veggie peeler. Create long strands, lengthwise. Avoid using zucchini pieces with seeds as the noodles will fall apart. Drain and dry the noodles for 15 – 30 minutes in a colander, then toss with salt. Next, heat the butter and 1 tablespoon oil over medium-high heat in a large skillet. Add garlic and cook for 30 seconds while stirring. Add the shrimp and cook for 1 minute while stirring.

To prep the sauce, whisk the broth and cornstarch in a small bowl. Add this mixture to your shrimp and mix in the wine, lemon juice and capers. Simmer for 4 – 5 minutes until the shrimp is just cooked through and then remove from heat.

Heat the last of the oil in a large nonstick skillet over medium-high heat. Gently squeeze the zucchini noodles to remove any excess water and add them to the skillet. Toss for 3 minutes until hot. Serve the shrimp and sauce over the zucchini noodles.

1/4 teaspoon low sodium salt
1/4 teaspoon freshly ground pepper
8 slices good bread
1 medium tomato, cut into 8 slices
4 romaine leaves

Directions

Fruits You Can Regrow from Scraps

Posted in: Catering in Raleigh NC

Some fruits and vegetables are like superheros. How you ask? Several of them have these magical regeneration powers. They can literally regrow themselves. However, they will need a little help from you. Check out this list below and even try them for yourselves this spring and summer. Searching for Raleigh caterers for a wedding, social, or business event this spring? Call Catering by Design! Let us tell you how we can help you save time and money!

Try Regrowing These Fruits from Your Leftovers

Pineapple

You’ll need to be a patient gardener to regrow pineapples, but it can be done. Just know that it will take between 2 and 3 years before your first harvest. Just cut the stalk off from the top of the fruit and cut off horizontal sections until you see the root buds. Leave only about an inch of the leaves on the base and plant in a warm spot that has good drainage.

Strawberries

Use some tweezers to remove several seeds from the outer skin of the strawberry. Rinse and dry them off. Put some soil in a container and drop the seeds in. Cover them with more dirt and place your container in a sunny spot. Frequently water them until they sprout and then transfer to a larger pot or plant outside in your garden.

Avocado

Avocado is another slow grower as it can take up to six weeks just for the stem and roots to appear. First, remove and wash the pit. Place 4 toothpicks in it and suspend over water in a jar. The water should just cover the bottom inch of the pit. Keep your jar in a warm place but not in direct sunlight. Keep a check on the water levels and add more as needed. When the stem reaches 6 inches, cut it back to 3. When leaves finally appearing, transplant it to soil leaving about half of it above the soil line.
