Summer Recipes for Healthy Eating

Shrimp Piccata with Zucchini Noodles

This new twist on Shrimp Piccata tastes great. A tangy lemon-caper sauce and zucchini noodles gives this healthy Italian recipe a makeover. This recipe makes about 4 servings and takes about 35 minutes to prepare.

Ingredients
5-6 medium zucchini (2 1/4-2 1/2 pounds), trimmed
1/2 teaspoon salt
2 tablespoons butter
2 tablespoons extra-virgin olive oil, divided
2 cloves garlic, minced
1 pound raw shrimp (21-25 count), peeled and veins removed, tails left on if desired
1 cup low-sodium chicken broth
1 tablespoon cornstarch
1/3 cup white wine
1/4 cup lemon juice
3 tablespoons capers, rinsed
2 tablespoons chopped fresh parsley

Directions
First, make your zucchini noodles using a spiral vegetable slicer, or veggie peeler. Create long strands, lengthwise. Avoid using zucchini pieces with seeds as the noodles will fall apart. Drain and dry the noodles for 15 – 30 minutes in a colander, then toss with salt. Next, heat the butter and 1 tablespoon oil over medium-high heat in a large skillet. Add garlic and cook for 30 seconds while stirring. Add the shrimp and cook for 1 minute while stirring.

To prep the sauce, whisk the broth and cornstarch in a small bowl. Add this mixture to your shrimp and mix in the wine, lemon juice and capers. Simmer for 4 – 5 minutes until the shrimp is just cooked through and then remove from heat.

Heat the last of the oil in a large nonstick skillet over medium-high heat. Gently squeeze the zucchini noodles to remove any excess water and add them to the skillet. Toss for 3 minutes until hot. Serve the shrimp and sauce over the zucchini noodles.

BLT and Avocado Sandwiches

This healthy BLT recipe is a great for breakfast, lunch or dinner! This recipe makes up to 4 servings and takes about 25 minutes to prepare.

Ingredients
8 slices center-cut bacon, halved
1 ripe medium avocado
2 tablespoons fresh chopped basil
1 tablespoon mayonnaise
1/2 teaspoon finely grated or minced garlic
1/4 teaspoon low sodium salt
1/4 teaspoon freshly ground pepper
8 slices good bread
1 medium tomato, cut into 8 slices
4 romaine leaves
1 cup alfalfa sprouts

Directions
Cook your bacon in your large skillet over medium heat and drain. Toast your bread and start prepping your avocado. Stir in the basil, mayonnaise, garlic, salt and pepper. Spread about 2 tablespoons of this mixture over 4 toast slices. Place 4 pieces of bacon, 2 tomato slices, 1 lettuce leaf, 1/4 cup sprouts and the remaining toast and combine. Serve and enjoy!

Fruits You Can Regrow from Scraps

Try Regrowing These Fruits from Your Leftovers

Pineapple

You’ll need to be a patient gardener to regrow pineapples, but it can be done. Just know that it will take between 2 and 3 years before your first harvest. Just cut the stalk off from the top of the fruit and cut off horizontal sections until you see the root buds. Leave only about an inch of the leaves on the base and plant in a warm spot that has good drainage.

Strawberries

Use some tweezers to remove several seeds from the outer skin of the strawberry. Rinse and dry them off. Put some soil in a container and drop the seeds in. Cover them with more dirt and place your container in a sunny spot. Frequently water them until they sprout and then transfer to a larger pot or plant outside in your garden.

Avocado

Avocado is another slow grower as it can take up to six weeks just for the stem and roots to appear. First, remove and wash the pit. Place 4 toothpicks in it and suspend over water in a jar. The water should just cover the bottom inch of the pit. Keep your jar in a warm place but not in direct sunlight. Keep a check on the water levels and add more as needed. When the stem reaches 6 inches, cut it back to 3. When leaves finally appearing, transplant it to soil leaving about half of it above the soil line.

Based on a report from The Guardian, almost half of all produce grown and purchased in the U.S. is trashed. This equates to roughly 60 million tons annually at prices between $160 – $218 billion. Making Your Own Flavor-packed Sea Salts

To make your own flavor-infused salt, you first need to select the best type of salt for your cooking style. There are actually many options. The most affordable is probably Kosher salt. However, you can also choose Maldon, fleur de sel or sel gris salt. Here’s a pro tip. For better texture and appearance use a coarser and flakier type of salt.

The next step is selecting the flavors that you want to infuse your salt with. You can use many different types of herbs, citrus peels, smoke, hot sauce, and lots more. There are an endless amount of options that you can choose from.

When it comes time to make the salt, we suggest using 1 tsp of flavoring for every 1/4 cup of salt. You’re going to want to store your salt in an airtight container and in a dark place. Be sure to let your flavored salt sit for a few days after mixing to allow all of the flavors to thoroughly infuse.

How to Bake Homemade Bread

Today’s post is going to teach you how to bake bread with an easy to follow recipe. Easy to Follow Recipe for Baking Bread

Servings: 32 | Prep: 20 min. + rising Bake: 30 min. + cooling

Ingredients:

1 – 1/4 ounce package active dry yeast
2 – 1/4 cups warm water
3 tablespoons – sugar
1 tablespoon – salt
2 tablespoons – canola oil
6 – 3/4 cups all-purpose flour

Instructions:

First, dissolve your yeast in a large bowl of warm water. Then add the salt, oil, sugar, and 3 cups of your flour. Beat this mixture until smooth. Now stir in the remaining flour 1/2 cup at a time to form a soft dough. Transfer the soft dough to a floured surface and knead for about 8 – 10 minutes until it’s smooth and elastic. Now place the dough into a greased bowl, turn once to coat the top. Cover and let rise in a warm area until the dough has doubled in size. This will take about an hour and a half.

Once risen, punch down and turn onto a lightly floured surface. Next, divide the dough in half and shape each portion into loafs. Place your portions into 2 greased 9×5 loaf pans. Cover and let rise until doubled. This should take about 30 – 45 minutes.

Now bake at 375° for 30-35 minutes or until golden brown. The bread should sound almost hollow when tapped. Remove the loaves from their pans and place on a wire rack to cool.
