Fantastic Foods to Candy for the Holidays

Posted in: Catering in Raleigh NC

People have been candying foods since the 1300s. Mainly because it’s a great way to preserve them. Most candy whole fruits, smaller pieces, or pieces of the peel. These are placed in heated sugar syrup which absorbs the moisture and preserves it. If you like to make homemade goodies for your friends and family during the Holiday season, then candying is something you should try. Candying is also a great way to use up leftover kitchen bits that would otherwise wind up in the trash. Over the next few posts, we’ll talk about some of our favorite foods that are great for this technique. Need the best holiday catering in Raleigh NC? Call Catering by Design today for big savings.

Holiday Catering in Raleigh NC

Candied Apricot

Candied apricots are great snacks by themselves for the holidays. They also taste great in baked breads, cakes, and muffins. Be sure to check out the recipe.

Candied Ginger

Candied ginger is great for baked goods like gingerbread cupcakes, vanilla ice cream, and can be used in salads as well. You can also save the syrup for cocktails. Here’s the recipe.

Candied Citrus Peels

Grapefruits, oranges, citrons, and lemons all work well for candying. Not only do they make great baking ingredients but you can munch on them as a snack as well. Your kids will love them. You can also use the candied peels as a garnish for cocktails as well. An easy-to-follow recipe can be found here.

Glacé Cherries

To make glacé cherries you take maraschino cherries and candy them in sugar syrup. They work well in baked breads, muffins, and cakes, or as a treat by themselves. Here is a recipe. If you candy them correctly these treats can last for over 6 months.

Candied Strawberries

These tasty chips will add a sweet and bright pop to cakes, pastries, pancakes, and your morning cereal. You can even pack them in your child’s lunch as a snack. Check out the recipe!

Stay tuned for our next post for several other foods that can be candied that you might not normally consider.

The Worst Halloween Candies

Good & Plenty – Does anyone really like the taste of black licorice? Not really! The only thing worse than ropes of black licorice is boxes of Good & Plenty. This candy is just awful.

Candy Corn – I actually really like candy corn. However, it’s really not a great candy to be given out during Halloween. For starters, it’s all loose and not individually wrapped.

Tootsie Rolls – I personally like Tootsie Rolls, especially the flavored ones. Kids, on the other hand, don’t seem to be really fond of them. Opt for different chocolate candy.

Peanut Butter Kisses – These are not Hershey Kisses, these are gobs of disappointing taffy. Even though they sound good, they’re really not.

Bazooka Bubble Gum – Probably the worst chewing gum on the planet. If the thick white powder coating wasn’t enough, chewing the gum is like trying to chew a brick.

Runts – Parents hate Runts because they can pose a real choking hazard. If you want to give out a better alternative, go for the small individual boxes of Nerds.

Butterscotch Candy – With all the other options available for Halloween candy, why on Earth would you choose butterscotch? Don’t do it, anything except a pencil will suffice.

Hardboiled Eggs

The days of chopping and dicing hardboiled eggs are over. Just whip out your handy box grater and grate them right onto your salad, or straight into a bowl for making egg salad.

Brown Sugar

When it comes to keeping and storing brown sugar one thing is inevitable; one day you’ll come face-to-face with an impenetrable brown sugar boulder. Skip the icepick and leave your steak knife in the drawer. Grab the box grater instead. Believe me when I say it works great!

Cauliflower Rice

Paleo diets are really trendy right now so I decided to add cauliflower rice to the list. It’s a great sneaky vegetable. You add it to everything from mashed potatoes, to risotto, and about any type of soup. Use the medium size holes on your box grater to achieve the right texture.

Chocolate

Whether you need chocolate for baking or chocolate for a dessert garnish, your trusty ole box grater can help you make quick work of those big chunks.

Making Restaurant-Quality Salads at Home

They use a few industry secrets to keep your taste buds tingling. Guess what? We’re going to share them. In the next two posts, we’ll be covering these secrets with a how-to guide for you to use at home. For the most affordable catering Raleigh NC has to offer, look no further than Catering by Design. Restaurant-Quality Salads Begin With The Greens

The first secret to making a great salad begins with the greens. Here’s a few easy and simple tips that you should always start with when making your salads at home. Try these the next time you add one to your next menu and watch your friends and family be amazed.

Mixed Greens

Try not to use just one type of lettuce or greens for your base. A mix of greens will automatically elevate your salad from the start. You can even buy mixed salad greens at most grocery stores. When mixing your greens, be sure to keep flavor and textures in mind. If you’re looking for more of a crunch, add iceberg or romaine lettuce. If you’re looking for a pop of flavor, add watercress or arugula.

Seasoned Greens

Did you know that fresh produce also needs to be seasoned? That’s right, and it’s often overlooked by home salad chefs. Even though you’re not cooking your greens, adding some salt, pepper, and other seasonings will make your salads shine. So do yourself a flavor favor, and do not forget to season the greens.

Chopped Greens

A salad will become instantly better when it can be easily eaten. Giant chunks or leafs of lettuce can make eating one cumbersome and messy. Be sure to spend some time chopping everything in your salad into bite-sized pieces. Everyone will be thanking you!

This Food Prep Trick Could Save You Loads of Time

Posted in: Catering in Raleigh NC

I’m always looking for ways to save time and money when it comes to food. I recently stumbled upon this one trick while researching another topic and decided to give it. I have to say, it’s simple and it works. Keep reading for the big reveal. Looking for affordable Raleigh wedding catering, business catering, or event catering? Call the pros at Catering by Design. We have the best options for Triangle weddings, corporate meetings, banquets, social events, birthday parties, and more.

Raleigh Wedding Catering

So here’s the big secret! It’s really basic so don’t be disappointed. When you return home from the grocery store start prepping right then. Do not just take the groceries out of their bag and put them away in the pantry or in the refrigerator. Get to work. This will save you loads of time during week ahead when you’re tired and your kids are screaming about when dinner is going to ready. Over time this method will also help you save money by reducing food waste as well.

Here’s how you can make it work for you. When you get back home from the store you should get your grocery list back out and compare that with the meals you plan on cooking during the week. With your list in hand, put away the items that you know you’re not going to be needing right away and place other grocery items out on your counters so you can take inventory of what you have to work with.

Next, get out your glass or plastic storage containers and get to slicing, chopping, peeling, washing, blanching, etc. Put all of your prepped ingredients into these containers and strategically place them in the front of the fridge so you can easily see and access them.

When you get home from work or have had a long day being a stay-at-home parent, making dinner doesn’t take all night to complete. Doing as much leg work as you can before crunch time hits will save you many valuable minutes during the week. Don’t stop at your veggies either. You can start soaking dried beans, make your salad dressings or pasta sauces, and many other things beforehand as well.

If you’re looking for great food at even better prices, keep reading to see why calling Catering by Design for all of your event food needs makes sense!

Posted in: Catering in Raleigh NC

When it comes to eating healthy, fruits and veggies are at the top of most lists. However, data from the USDA says that nearly 70% of the produce grown and sold here in the US was found to contain pesticide residue. This is even after they were thoroughly washed and/or peeled. The Shopper’s Guide to Pesticides in Produce from the Environmental Working Group provides an annual list of which fruits and vegetables fall into the dirty dozen category along with the clean fifteen. Below we’ll list the produce that made this year’s dirty list as well as produce with the least amount of pesticide residues. Dirty Dozen

Strawberries

Did you know that the average American eats about eight pounds of fresh strawberries a year? Did you also know that the USDA tests found that strawberries were the most likely fresh produce item to be contaminated with pesticide residues, even after they were rinsed in the field and washed before eating?

Spinach

Conventionally grown spinach has more pesticide residue by weight than all other produce tested. Three-fourths of the samples tested were contaminated with a neurotoxic bug killer banned from use on food crops in Europe.

Kale

More than 92% of kale tested contained two or more pesticide residues. A single sample of conventionally farmed kale could contain up to 18 different pesticides. Yummy!

Nectarines

Thirty-three pesticide residues were found by the USDA Pesticide Data Program.

Apples

On average Americans eat more than 10 pounds of raw apples every year. Apples also carry around an average of 4.4 pesticide residues as well.

Pears

Clean Eating – What Is It?

Posted in: Catering in Raleigh NC

Eating clean. We’ve all heard this buzzword on the news, on blogs, and on social media. But what is clean eating all about? If you’re unsure keep reading because we’ve got some answers for you in today’s post. If you need affordable Raleigh event catering this summer, call Catering by Design today to save time and money.

Raleigh Event Catering
In essence, clean eating is your diet or way of eating. It’s also considered to be a lifestyle that aims to improve a person’s health and overall well-being. There are a few key principles of eating clean that you should know about and we will list them below.

More Real, Less Processed

Eating more whole foods is the first step to eating clean. This means eating foods that are basically in their natural state and have not been processed with added sugar, sodium, trans fats, synthetic preservatives or chemicals.

Eat for Nourishment

Don’t eat just to eat. Eat regularly and eat balanced meals that nourish the body. In between meals, eat healthy snacks and not junk food. When you’re cooking at home prepare your meals in healthy ways. When you have to eat out, choose the best options that provide the most nutrients.

Eat More Plants

You’ve been told to eat your veggies since you were little. As an adult, eating your vegetables is still very important. Instead of eating red meat for protein, try plant-based proteins instead. These include beans, lentils, and peas. High-protein whole grains like quinoa, barley, and buckwheat are also healthy alternatives to red meat.
