Ingredients I Always Have on Hand

Posted in: Catering Company

Over the years I have really changed how I shop for groceries. I’ve made great efforts to save money, throw away as little food as possible, and be more efficient with my meal planning. That means that there are a few pantry basics and staples that you’ll always find in my kitchen. These items don’t include things like herbs, spices, olive oil, and other cooking essentials. I’ll be focusing on what I’m buying the most of each week. If you need an affordable Raleigh catering company for an upcoming event this year, call us today at Catering by Design. You’ll love our menu selections, tasty flavors, service, and incredible prices.

Fresh Fruits

My family loves fresh fruit of all different types. All of us keep fruit packed in our daily lunches for snacks and sides. We eat a lot of bananas, apples, oranges, grapes, strawberries, and cherries. One thing I try to do when buying fruit is to select items that have multiple options of what to do with them, like eating them raw or making pies, cakes, or muffins, adding them to yogurt or smoothies, etc.

Potatoes

I like to keep a variety of potatoes on hand, including a few sweet potatoes. Potatoes can be used in many different ways, from mashed or smashed, baked russet, roasted, fried, boiled, etc. My kids also love sweet potato fries so I try to make them at least once a week.

Eggs

We go through a lot of eggs. We eat them for breakfast many days and use them hard boiled for salads and other snack needs. I also like to add eggs when making fried rice, and I use a lot of them for baking recipes.

Avocados

We love avocados in my household. We can eat them morning, noon, and night. We make a lot of Mexican inspired dishes through the week so they have to be on hand always. Avocados are also a super food. They’re packed with lots of great stuff that does good things for your body.

Rice

Rice is another starch I like to keep on hand because it is easy to cook and has lots of uses. You can prepare rice with a variety of recipes as a side. You can use rice in a variety of American, Asian, and Mexican dishes. Rice is also a great leftover food for extra meals.

Anti-Aging

A recent study reported that mushrooms have significantly high levels of ergothioneine and glutathione. These antioxidants are believed to help fight aging and boost health. Porcini mushrooms have the highest levels. However, even white button mushrooms have higher amounts than most of the foods you’re eating.

Mushrooms Help Your Heart

If you’re looking for a food that can help you lower your bad cholesterol, especially if you’re an overweight adult, then eat more mushrooms. Mushrooms also contain phytonutrients that can help prevent cells from sticking to blood vessel walls and forming plaque buildup. What we are saying is that mushrooms help to protect the heart by promoting healthy blood pressure and circulation.

Mushrooms also contain polysaccharides. Polysaccharides are one of the key active components in medicinal mushrooms. Polysaccharides also help prevent and protect against the adverse effects of cancer, diabetes, infections, and obesity as well.

Helps Prevent Neurodegenerative Disease

Mushrooms can help prevent and also be used as a therapeutic agent in the treatment and management of neurodegeneration diseases like Alzheimer’s and Parkinson’s.

Vitamin D

The white button mushroom variety are one of the few non-animal sources of vitamin D. When exposed to ultraviolet light the amount of vitamin D is amplified.

The Amazing Health Benefits of Mushrooms

Posted in: Catering Company

Mushrooms are awesome. They taste great and are considered to be little eco powerhouses. These little fun guys (get it?) are also very nutritious as well. Eastern and Asian cultures have long known about the medicinal and health benefits of mushrooms and western societies have slowly been catching up. Today we’re going talk about some of these health benefits. For the most affordable catering Raleigh NC services for your next event, give us a call at Catering by Design. B Vitamin Bounty

B vitamins are really important to our bodies. They boost energy by breaking down proteins, fats, and carbohydrates and have a big impact on how our nervous system performs. Mushrooms contain folate (B9), riboflavin (B2) for horomone production, niacin (B3) for healthy red blood cells, and pantothenic acid (B5) for healthy skin.

None of the Bad Stuff

Mushrooms offer a host of health benefits like vitamins, minerals, fiber, and protein. Mushrooms do not contain high calories, sodium, or cholesterol.

Serious Amounts of Selenium

You’re probably not too familiar with selenium. It’s an amazing nutrient and essential mineral that is vital to your health. Even small amounts help with metabolism and thyroid function. You only get selenium through your diet and mushrooms are the leading source for all produce. Selenium is also an antioxidant that protects cells from damage and strengthens the immune system. It also promotes healthy fertility in men, protects against heart disease, slows down aging, and more.

More Butter Substitutes for Healthier Eating

Posted in: Catering Company

Welcome back to our butter blog. Butter is delicious and it’s a major part of baking and cooking. Butter is also high in saturated fat and calories also. That’s why many people look for butter alternatives. As we mentioned in our last post, three of my favorite butter subs are avocado, applesauce, and olive oil. I’ve tried these and love them. Below we will tell you about a few more you should try out. If you’ve tried any of these, let us know on our Facebook page. For the best Raleigh NC catering service, only Catering by Design will do. Call us today to learn why our customers love us and keep coming back.

Mashed Bananas

Mashed bananas are great in desserts, especially banana nut bread. Did you know that you can use them in just about any baked dessert recipe as a butter or oil substitute? Mashed bananas will add natural sweetness, rich flavor, extra nutrients, and texture to your dishes.

Greek Yogurt

If you’re on a plant-based diet then Greek yogurt isn’t going to work for you. For those looking to reduce their saturated fats and calories, Greek yogurt is a yummy choice. Use Greek yogurt best in loaf cakes and brownies. It will add density and moistness to them.

Prune Puree

I’m not going to lie, this one blows my mind. Never in a million years would I ever consider using prune puree as a butter substitute. But the more I read up on it and look over recipes, the more I want to give it a shot. After all, prunes are just dried plums, and I love plums! If you’re going to give this a shot, I’ve read that this one works well in dense baked goods and ones that are darker in color. You’ll want to use about 1/3 cup of prune puree to replace 1/2 cup of butter in baked goods.

We hope these last two posts on butter replacement ingredients have given you a few new ideas to try. Be sure to keep coming back each week to read more helpful kitchen tips and tricks.

Better Than Butter – Butter Replacements

Posted in: Catering Company

If you live in the South then you probably eat butter in and on just about everything. But for some people, eating a lot of butter is not something they can do for health related reasons or diet restrictions. Finding a good butter substitute can also be a headache. That’s why were going to help you out. We’ve found a list of great butter alternatives that we think you should try. Take a closer look below. If you need an affordable Raleigh catering company for an upcoming event this year, call us today at Catering by Design. You’ll love our menu selections, tasty flavors, service, and incredible prices.

Avocado

Avocado is a wonder food. I’m actually mad at myself because it took way too many years before I came around to trying it and now I love it. Avocado is actually one of the best butter substitutes I’ve tried. It is perfect because of its richness. You can use avocado in sweet dishes or with savory recipes. In fact, you won’t believe how well it pairs with chocolate. You can even use avocados in cheesecake! Mind blown!

Applesauce

Next on my list of favorite butter subs is unsweetened applesauce. You won’t believe how amazing it is for baked goods. Applesauce adds flavor depth and also helps to keep your baked items moist. You should really try it the next time you want to make a chocolate cake. For your recipes you’ll use about half the amount of applesauce in place of the butter.

Olive Oil

Butter or olive oil? Which is better for you? Both are 100 percent fat. Both have more than 100 calories per tablespoon. However, olive oil has less saturated fat and no dietary cholesterol making it a better cooking choice compared to butter.

We’ve got some more butter alternatives in our next post. Be sure not to miss it. For the greatest catering in the area at the best prices, keep reading to learn more about how Catering by Design can help you save time and money.

More Edible Garden and Lawn Weeds

Posted in: Catering Company

Welcome back! We’re talking about all the edible weeds that you can find in your backyard. In our last post we talked about dandelions and clovers. Today we’ll discuss a few other weeds that you might not have known were edible. Need affordable Raleigh caterers for your next spring or summer event? Call the experts at Catering by Design today. You’ll love our selections, prices and customer service.

Purslane

Purslane grows all over the world. Purslane likes moist garden beds, lawns, and shady areas. It usually grows close to the ground. It’s technically a succulent and has a crispy texture. It’s also known as garden purslane, little hogweed, pusley, and wild portulaca among others. Purslane is actually a nutritional powerhouse. It’s loaded with omega-3 fatty acids and antioxidants. The leaves and stems can be eaten raw or you can cook them. It has a peppery flavor and goes great in salads, stir fry, and helps to thicken soups and stews.

Plantain

Plantain is a very common lawn weed found all over the US. It’s so hardy that it can even grow in the cracks of cement or asphalt. Not to be confused with the tropical fruit, this leafy green weed is equally amazing. Plantain can be eaten or used medicinally. For medicinal purposes you can use it to soothe burns, rashes, stings, and surface wounds. Young leaves can be eaten raw, boiled, sauteed, or steamed. Adult leaves can also be eaten but tend to be somewhat stringy and a little tough. The seedpods can be cooked like grains, ground up to make a flour, or boiled and served as a side dish like green beans or asparagus. Plantain leaves are rich in iron and vitamins A and C.

We hope you’ll invoke your adventurous side and try some of these backyard delicacies. Get the kids involved! They’ll enjoy harvesting these yummy weeds.

For Women over 50, Diet Drinks Could Be Harmful to Your Health

Posted in: Catering Company

Way back in the day sodas were invented to serve as a health drink. They were filled with medicinal ingredients and were popular at the pharmacies. In 1952, the first diet soda was created as a drink for diabetics not for dieters. Overtime, more diet sodas flooded the market. Now let’s jump forward to present day. Two-thirds of adults and one-third of all children in the US are overweight or obese and experts agree that soda and other sugary drinks have played a big role. Diet drinks have health concerns too, especially for women over the age of 50. Let’s take a closer look. If you’re searching for the best catering companies Raleigh NC has to offer this summer, call Catering by Design. We offer big savings, awesome customer service, and great tasting food.

Stroke, a journal of the American Heart Association, recently published a new study with some alarming stats. Researchers concluded that among post-menopausal women, drinking two or more diet drinks per day was associated with an increase in the risk of having a stroke caused by a blocked artery.

A group of 81,714 women (age 50 to 79 years) participated in the Women’s Health Initiative Observational Study to see if there were any correlations between drinking artificially sweetened beverages and risks of specific types of stroke in a large, racially diverse group of post-menopausal women. Women who drank two or more artificially sweetened beverages per day were:

  • 31% more likely to have a clot-caused (ischemic) stroke
  • 29% more likely to develop heart disease (fatal or non-fatal heart attack)
  • 23% more likely to have a stroke
  • 16% more likely to die from any cause

For some groups of women over the age of 50, the risks were even higher:

  • Obese women without previous heart disease or diabetes were 2.03 times as likely to have a clot-caused stroke.
  • Women with no previous heart disease or diabetes were 2.44 times at risk of having a common type of stroke caused by a blockage of one of the very small arteries within the brain.
  • African-American women without previous heart disease or diabetes were 3.93 times as likely to have a clot-caused stroke.

Tips for Eating More Leftovers

Posted in: Catering Company

Leftovers are a win-win situation. However, there are many people that are really not in love with the idea of eating the same meal more than once a week. That’s a shame because leftovers require little to no effort, are less expensive than eating out, remove clutter from the fridge, and reduce food waste. Here’s some helpful advice on how to step up your leftover game. If you’re searching for the best event caterers Raleigh NC has to offer this summer, call Catering by Design today for big savings. Recipes for Better Leftovers

When it comes to eating more leftovers we have to understand that some just taste better than others. Start by planning recipes that make great leftover meals. Stews, pasta, casseroles, all make for great leftover meals. Fish and seafood, not so much. Planning out your meals to encourage eating more leftovers is a step in the right direction.

Cook for Leftovers

Once you’ve determined which meals you’ll enjoy the next day or two, prep your recipes by doubling or tripling the ingredients. This will ensure that you have enough leftover food to provide you and your family with extra meals.

Use Leftovers in Other Recipes

If you find that you don’t have enough leftovers for an extra meal then reuse what you do have in a different recipe. Leftover meats and veggies might pair well in a breakfast omelet or frittata. Leftover nuts, grated cheese, hard boiled eggs, and prepped veggies could go into a great salad. If you have leftover bits of meat, grains, vegetables, legumes, and tomatoes consider making a soup. If you have lots of bones left over then make some tasty homemade stock. Extra cooked rice from the night before can be transformed into fried rice with the addition of some veggies and whatever protein you have laying around. Leftover stale bread is perfect for bread pudding.

If you need some inspiration on what to make with your leftovers take a minute and head on over to this nifty website. You can add three ingredients to their tool and it will kick back a list of great recipes for you to try. You have lots of options for getting creative with your leftovers to save you time and money.

Keep Leftovers in Clear Containers

Out of sight, out of mind. Don’t store your leftovers in containers you cannot see into. Also, do not push them into the back of the fridge where you cannot see them. You’ll eventually forget about them and your extra efforts will be moot. Keep your leftovers in see through containers and store them at the front of your fridge for easy access.

Buy a Good Thermos

Speaking of storing leftovers, invest in a good working thermos. Some leftover meals taste way better when they are hot, not cold. This is especially a good idea for those working in jobs without access to microwaves and for your children when packing lunch for school. A good thermos will pay for itself after a couple of uses compared with the costs of eating out.

Have a Leftover Buffet

Once a week treat your entire family to a leftover buffet of all the meals and containers you have piling up in the fridge. Put everything out on the table in nice serving dishes and let all the members of your family choose what they want to finish off. Set out an abundance of condiments, seasonings, and sauces, and even offer to prepare a few side dishes to encourage participation.

Pickle/Caper Juice

The juice from pickles and capers is a great addition to many recipes. You can use caper juice in dips like tapenade and olivada, seafood dishes, and pasta sauces. Pickle juice pairs well with potato salad, egg salad, coleslaw, tuna salad, Bloody Marys, pasta salad, and more. You can also use the juices in soups like borscht or gazpacho, or with veggies like green beans, beets, kale, and cabbage.

Pineapple Core

A pineapple’s core is totally edible but most people throw it away. Even though the core doesn’t have the same succulent texture of the rest of the pineapple, it’s still just as delicious. The core also hides one of the pineapple’s most beneficial nutrients, bromelain. Bromelain is a proteolytic enzyme that breaks down proteins to help aid with digestion. Dice up the core and use it in marinades, salsas, and smoothies.
