At Catering By Design – it’s all about teamwork. Working together closely as a team we can deliver excellent food and exceptional service. That’s what we do.

Though people may want to focus on the founder of Catering By Design, Greg Lewis, he  is the first to say – it’s our people who make us look good.

Lewis, an executive chef by profession, built the organization from the ground up, slowly, with care, focused on the quality of our employees, the quality of their training, the quality of our food and our service. That’s him with the dark jacket and glasses in the awards photo.

That spirit is the way we do things.

And we know it works. Our people stay with us. Because we treat them right, and each other right, it’s natural to turn around and treat our customers right.

Catering by Design’s chef is Chef Luis Compos who  has been with Catering By Design since its start in 2000, working his way up and earning his position as Chef. (Right in the awards photo.)

Our operations manager is Steve Zapadinsky (left in the awards photo). Steve has been in the food industry for years and worked as manager of large restaurants, as well as in food sales. Steve liked his weekly if not daily visits to Catering By Design, so when they mentioned they had an opening, he jumped at it. Steve orders all the food and beverages, organizes each event and ensures that all the right equipment is available for each order.

Our catering sales manager is Jen Hernley, (she’s the one with the long hair!).  Jen also has been with us for a long time, and she loves her job. She helps customers plan their catering orders and events, working on their budget, menu selection, timing and any other special needs. She’s organized, knowledgeable and effective.

Kelli and Amanda are part of the catering team also, and you may be talking with one of them when you call, or when you get a delivery. Both bring such a positive can-do attitude that we’re getting great thank you notes!

We have several event coordinators. Cheri Matisuf works in the office as well as serving food. Steve Gade and Steve Lombardo do delivery, setup, serving and cleanup.

We have dozens of other team members who work events with us, so we can scale up or down as we need for whatever events we are asked to cater. To our left Albert and Jim are serving drinks at a Raleigh Chamber of Commerce after hours event.

Below, is our team at the SAS Golf Championships at Prestonwood. We’ve been hosting several hospitality suites at the annual championships each year in the fall.

Need to Cater a Big Event? Questions to Ask a Caterer

Choosing a caterer for a big event? Do you know what questions to ask? You might think of some of these, but others you may not know to ask, if you’re not in the catering business. Here are the questions we suggest.

  • How long have you been in business?
    • This will let you know how much experience they have.
  • Are you licensed and insured?
    • Why do you need to know if your caterer is licensed and insured? Some venues require it. In North Carolina it is illegal for a caterer to work out of a home. Your caterer must be in an approved and inspected facility. Only cake bakers are exempt.
  • What venues have you been approved to cater in?
    • If your caterer isn’t approved for the venues you’re considering, you’ll have to get a different caterer, or choose a different venue.
  • When do you require payment?
    • Paying 50 – 70 percent is normal, with the balance due the day of the event. We don’t recommend paying in full up front.
  • Do you help with other aspects of event planning?
    • With so many arrangements to coordinate for a big event, it can be very helpful to have another partner to ensure that everything goes as planned.
  • What other resources do you bring to the table?
    • When you work with a full service catering company your options are greatly expanded. From renting tents, bringing in specialized entertainment, providing whatever kind of decorations and setup you’d like, a full service catering company really expands your options.

Spring time is on its way. This year’s cold snowy winter may be behind us. And in just a few weeks, it will be time for the annual Spring Fling in Apex!

Mark your calendars for:  Saturday April 9 – noon – 5 pm.

What is Catering by Design doing? We’re one of a number of community sponsors, and we stepped up, being that we’re in the catering and event planning business, to coordinate the donations and staffing. (And of course we’re helping out with the food!) There are over 80 volunteers and many many donations. Come early and get a free lunch between noon and 2 pm.

Kids will have a great time with carnival games and egg hunts, all through the day, and free snacks of cotton candy and popcorn.

And did we say that it’s all free?

It is all free!

Last year we had a surprising number of visitors and so this year we’re preparing for 10,000 people!

People come from as near as Apex and Cary, and farther away too, from Fuquay Varina, Pittsboro, Carrboro and Wake Forest.

You’re invited and your friends are invited. Come make an afternoon of it.

Catering by Design Recipes: Olivada

Olivada

Olivada is a spread for crackers, pita or other fresh breads.

Ingredients

Pitted Black Olives (Enough to fill your Food Processor)

1 cup Capers

1 tbsp. Fresh Garlic

1 tbsp. Lemon

1 tbsp. Black Pepper

1 tbsp. Parsley

Preparation 

Grind up the pitted Black Olives in your food processor. Add Capers, Fresh Garlic, Lemon, Black Pepper, and Parsley. Mix fully.

Serve in a bowl.

At Catering by Design we know you have a lot of decisions to make as you prepare for your big event. We know you appreciate it when you can get lists with the information you need. Our Raleigh Wedding Venues list includes most of the Raleigh area wedding venues where we have catered events, and we’ve included the information you’ll need to develop a short list.

One thing you’ll want to consider is that venues all price differently, some by the day, others by the hour, with different minimum hours. We suggest you estimate costs based on a 6 hour rental. Six hours is about the amount of time needed for a formal wedding reception, with two hours of total setup and take down included.

Catering by Design Recipes: Breaded Asiago Stuffed Olives

Breaded Asiago Stuffed Olives is a Catering by Design favorite. Consider it for your festive parties.

Ingredients for Breaded Asiago Stuffed Olives

The Olives

  •  18 Large Kalamata Olives Pitted and Halved

For Cheese Balls

  • 1 cup Shredded Asiago Cheese
  • 1/2 cup Shredded Mozzarella
  • 2 Tbls Fresh Grated Parmesan
  • 1 Egg
  • 2 Tbls Flour
  • 1 Tbls Grated Vadalia Onion
  • 1 tsp Chopped Garlic
  • 1 Tbls Copped Fresh Basil
  • Salt and Black Pepper to taste

For Breading

  • 3 cups flour
  • 5 eggs
  • 6 cups Fresh Bread Crumbs

For Freezing

  • Parchment paper for a baking sheet*
For Cooking
  • Olive Oil

For Serving

  • Tomato Basil Coulis or your Favorite Marinara Sauce

Preparation

Set the olives aside

Make the Cheese Balls

  • Mix all other ingredients together in a bowl
  • Keep mixing until very well blended
  • Roll into 1/2″ balls
  • Line your baking sheet pan with parchment paper
  • Place cheese balls on parchment lined sheet pan
  • Place 1/2 of an Olive on top of each Cheese Ball
  • Set the olive slightly into the cheese
  • Place back on sheet tray and freeze for 1-2 hours
  • Remove from freezer
Bread the Olives
  • Set up for breading the Olives with three bowls: one for Flour, one for the Egg and one for Bread Crumbs
  • Crack the egg and beat it until it is all smooth
  • By hand or with a slotted spoon, roll the stuffed Olive in the Flour bowl
  • Dip it into the Egg and then roll it in the fresh Bread Crumbs
  • Be sure to coat each Olive well with all 3 of the items so it won’t fall apart while cooking
  • Place back in freezer 1-2 hours on a clean sheet pan with parchment paper

Cook the Olives

  • Pan fry in a pan of hot Olive Oil
  • Cook till golden brown
Serve the Breaded Asiago Stuffed Olives
  • Serve in a Martini glass with Tomato Basil Coulis** or your Favorite Marinara Sauce
  • Garnish With Fresh Basil
* If you have a side-by-side refrigerator a normal baking sheet may be too wide for your freezer. So improvise with a smaller container that you can line with parchment.
**Roasted tomatoes, garlic and onion, salt and pepper and a little olive oil, roast in oven, until a little charred, then puree.

Catering by Design Recipes: Hummus

Hummus

Ingredients

Garbonzo Beans  (Enough to fill your Food Processor)

1 tbsp. Parsley

1 tbsp. Lemon

1 tbsp. Fresh Garlic

1 tbsp. Black Pepper

1 tbsp. Salt

½ cup Tahini Paste

Preparation 

Grind up the soft Garbonzo beans in your food processor. Add Lemon, Fresh Garlic, Black Pepper, Salt and Tahini Paste. Mix fully.

Serve chilled in a bowl with minced Parsley in the center.

(Variations: Some like to add a teaspoon of Olive Oil in the center, and a little Paprika.)

February 18 “I Love Animals” Singles Event at Catering-by-Design in Cary

At 7 p.m. on the 3rd Friday night in February, Singer Songwriter Robert Starling is going to provide the entertainment for a singles evening, the “I Love Animals” fundraising event at Catering-by-Design in Cary.  The ticket costs $20 and will benefit animal care in Chatham County.

Catering-by-Design in Cary is located next to Big Lots facing Kildaire Farm Road neat the Maynard intersection. The address is 132 Kilmayne Drive.  Admission includes Catering-by-Design’s famous hors d’oeuvres, and your first drink.
